1/2 Tablespoon of olive oil
1 tablespoon of butter
2 shallots, minced
2 cloves of garlic, minced
8 slices of prosciutto, chopped into bite-size
1 bag of fresh peas
2 containers of fresh pasta

Start by bringing a pot of water to a rolling boil for the pasta. Meanwhile, in a deep sauté pan over medium heat, drizzle olive oil. Sauté your shallots and garlic until they become tender and aromatic, which should take just a few minutes.
Next, add the chopped prosciutto and cook it until it turns delightfully crispy, which usually takes about 3 minutes. Introduce the bag of peas into the pan along with a knob of butter, then give everything a hearty toss to combine the flavors.
As the sauce comes together, start cooking your pasta. Boil it for just 2 minutes before transferring it directly into the sauté pan. Don’t forget to reserve some of the pasta water before draining it. This liquid gold will help to create a luscious sauce. Toss the pasta with the other ingredients in the pan, using the reserved pasta water to achieve the perfect consistency.

I have to say, this was the best fresh pasta I’ve used in a long time; it held its shape after being cooked. I made this dinner, and half of the family enjoyed it a few hours later due to the sports schedule. The pasta was still so firm and delicious, and I am incredibly impressed with its quality.
