
INGREDIENTS
2 lbs fish fillets of your choice
(flounder, trout or catfish are good choices)
3 large eggs
1/2 cup cold water
FISH FRY MIX
1/2 cup all purpose flour
2 1/2 cup yellow corn meal
2 to 3 tsp lemon pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt (or to your taste)
1 1/2 tsp cajun seasoning (I use Tony Chachere)
TIPS
*rinse fish in cold water (if store bought or prepackaged frozen)
*use flat bottomed dishes to dredge fish
*fry oil should be between 350 to 375 degrees Fahrenheit
*cook fish around 1 to 1 1/2 minutes on each side or until it starts to float and is golden brown
