Growing up every week my parents would load my brother and I into the car and take us to the grandparents’ house for Sunday dinner. My grandfather would always be standing outside waiting, not sure if we were always late, but it felt that way! My grandmother always had some new cake ready and my grandfather had some traditional greek dishes prepared for dinner. One of my favorites was this lemon chicken, in part because it was soo lemony! This dish is heaven, especially when paired with manestra, which is a tomato-based orzo pasta, and a nice greek salad. I added some lemon slices in with the potatoes and they softened and caramelized, absorbing all the flavors from the pan, not bitter at all. Will definitely be adding them into my other roasted chicken recipes!
