Mediterranean Lemon Chicken Orzo Soup
Heat 1 tbsp olive oil
Sauté 1 lb diced chicken, remove from pot
Add 1 onion, diced
3 carrots, diced
2 celery ribs, diced
3 cloves garlic, minced
12 tsp fresh thyme
Salt and pepper to taste
1 bay leaf
Add 34 cup orzo pasta
1 sprig rosemary
8 cups chicken broth
Add Juice and zest of 1 lemon
Fresh parsley and dill
