
• 1 large Gala or Granny Smith apple, halved, cored and thinly sliced
• Pepper
• 2 tablespoons extra-virgin olive oil
• 4 bone-in, center-cut pork loin chops
• 2/3 cup barbecue sauce
Heat 1 T. oil in a large skillet over medium high heat. Sauté onions and apples until light browning of onions. Remove from pan and set aside. Add 1 T. oil to medium high skillet and add seasoned pork chops, flipping once, until golden brown, 2 to 3 minutes per side. Arrange pork chops on top of onions and apples in skillet. Pour half of the barbecue sauce over the top. Cover with low heat for 5-10 minutes depending on thickness of chops.
Per Serving: 340 calories (150 from fat), 16g total fat, 4g saturated fat, 70mg cholesterol, 27g carbohydrate , 22g protein
