Boneless pork shoulder
Mix together 2 tsp of ground cumin, smoked paprika, pepper, brown sugar and 1 tsp of salt.
Rub the dry mix over the pork shoulder, covering as much of the meat as possible.
Leave it the fridge to marinate, ideally over night.
Add the the seasoned pork to the roasting or slow cook dish along with one and a half to two cups of apple juice.
Slow roast for 8-10 hours or until the meat is falling apart.
Remove pork and shred.
Drain fat from the cooking liquid and add in BBQ sauce to taste.
Re-add shredded pork and mix.
Serve with trimmings of your choice.
